Thai Mango Sticky Rice
Ripe mango served with sweet sticky rice, coconut, and pandan. It is one of Thailand’s best-known desserts, built around a simple combination of fruit, rice, coconut, and aroma.
What does pandan add?
Pandan contributes fragrance more than sweetness. One of its characteristic aroma compounds, 2-acetyl-1-pyrroline, is also important to the familiar aroma of fragrant rice. That is why pandan can smell strangely recognizable even when someone has never knowingly ordered it.
Is pandan just “Asian vanilla”? Not really. The nickname is convenient, but pandan and vanilla do not smell the same. Replacing one with the other may preserve sweetness while changing the part of the dessert you notice before the first bite. Simple dishes leave fewer places for an aromatic shortcut to hide.
